The
Assistant Director of Dining – Union Operations, supports the leadership and staff within the Nebraska Union and Nebraska East Union restaurant concepts by providing leadership, direction, management, and strategic vision. This position ensures operational excellence, maximizes sales and profit margins, and delivers exceptional customer service while executing all applicable Brand standards.
As the
Assistant Director of Dining – Union Operations you will: Lead and direct the overall restaurant operational management of within the Nebraska Unions. Ensure that all Union dining concepts are meeting operational and food safety standards. Provide leadership to managers and staff; recruit, hire, train, and develop managers and staff Ensure proper inventory within each location and assist with conducting inventory on a scheduled basis. Proactively manage the financial wellbeing of the individual restaurant concepts through analysis of sales, profitability, controlling food and labor costs, and make recommendations for growth and profitability. Build a customer service culture, by providing exceptional customer service.

Minimum Required Qualifications | Bachelor’s or equivalent education/experience. Hospitality Management, Food & Nutrition, Business or related field. Five years of operational experience within a food/beverage industry. Demonstrated experience in the following areas: food service management, budget development and management, inventory and equipment allocation, marketing, employee supervision and leadership, food production, and/or menu planning.
Must exhibit a firm knowledge of excellent food service management practices to include food production, service styles, menu planning, team building, staff development and training.
Must have knowledge of internal controls related to financial transactions, inventory management and equipment allocation.
Must have knowledge of appropriate purchasing procedures, including University standards and practices.
Must have a valid driver’s license and meet University driver eligibility requirements.
Preferred Qualifications | Experience with a progressive collegiate Dining service in all areas of Retail Dining service, strategic planning, and knowledge of organizational change, business operations and development. Previous mulit-unit operational experience. Experience working in or with a fast casual dining atmosphere and/or national restaurant Brands
